1/3 cup non-fat dry milk powder
3 1/2 tbsp whole-wheat bread
1 teaspoon sugar substitute
1/4 teaspoon baking powder
1/2 cup water
1 tsp canola oil
1 tsp vanilla extract
1/4 tsp coconut extract
Nonstick cooking spray
4 toasted pecan halves, chopped
1 teaspoon semisweet chocolate mini-morsels
In a small bowl, combine the dry milk, flour, sugar substitute, cinnamon, and baking powder. Whisk in the oil, oil, vanilla, and coconut extract till the batter is smooth. A few lumps in the batter are okay.
Heat an 8-inch nonstick skillet over moderate heat. Remove the skillet from the heat and pour in half the batter. Lift and tilt the skillet to spread the batter throughout the bottom. Return the skillet to the heat and cook for 30 minutes. Carefully turn over the cr?pe using a spatula, and cook the second side for another 30 minutes. Slide the cooked cr?pe onto a plate and then repeat the cooking procedure with the remaining batter.
Arrange half the banana pieces, dates, pecans, and chocolate morsels across the lower third of each cr?pe. Lift the bottom edge of each cr?pe and roll it up to serve.
